I’ve always had a lot of work to do but lately it’s become really unbearable. I’m paid well, but I’m not paid enough to be able to do the amount of work for several people. I am thinking whether I would find myself in this situation again if try going to competing organizations? I am too tired and my health has started to suffer and health has no price.

Work the job or move on junior. You can make similar dough at amazon
Leave if you can, or if it truly affecting your health and mental state and you are just fed up to the point of snapping. No job, no salary is worth compromising your "health and wellness" and dying for. Request a package if it comes down to that point.
