It's not ideal, but I can't afford to lose my job right now for medical reasons so I don't mind doing extra. What I do mind is being assigned more work that I've never done before, I've never been trained on how to do, and then being expected to just - I guess magically - do it. That's not how it works! This has been stressing the he-l out of me lately, but I have no idea what to do about it, other than continuing to try and figure out things on my own and praying I don't make a mistake that'll get me fired.

If your manager is unwilling or unable to provide the needed direction to ensure you can get the task done to satisfaction, then push back. If you don't, you only have YOU to blame. The power of NO! And stop the fear-based ("oh, my job!) thinking; it's creating anxiety you absolutely don't need right now.
Unfortunately that seems to be the norm and it's only going to get worse as the experienced employees are leaving in droves.
Get a doctor to sign off that it is causing you anxiety and go got short-term disability
