I’m sure they do. And I spy on them with that scanner in that one room.

The front end TL in my store spends most of her time watching the cameras. I won’t even give away a flower to a kid without paying for it now. I’ve been threatened to be fired because I took a bite of a cookie while in line to pay with cash in hand. Just always assume you're being watched and don’t EVER eat anything, especially weighted items, without paying first.
Anyone that is part of the tech team, MSIs, SSIs, regional or global tech can log into any camera in their region and retrieve data for leadership. Don't believe me? Ask one. I don't think anyone actively spies on TMs as a policy, but if you are stealing merchandise, stealing time, or harassing others, the means are there to capture footage.
As far as the computers go, yes there are programs such as FireEye (think sauron) on every computer that have algorithms looking for certain behavior.
Don't do illegal stuff on your computer, don't make threats, or steal, and you are safe. They are not looking at your facebook or checking how long you shop on amazon, they are looking for real threats such as theft or leaking private company info.
Any time you log into any work computer there an entire paragraph or two of disclaimers stating that you can and will be monitored at any time. Many websites are blocked, although the filter in my store is much more relaxed than my old store. Probably shouldn't be looking at anything inappropriate at work anyway.
Emails most certainly get flagged for certain keywords. Most likely words are probably union, unionize etc.
Store leadership (in my store) only watches cameras when an issue is brought to their attention otherwise most tms would be fired either for theft, time theft, smoking weed in the parking lot or cut glove violations or the countless other instances of dumb–sery that goes on. In the times when they do watch cameras to watch someone an other random tm always gets nailed for something too. Best bet is to not fall victim to the everyone else does it attitude and just pay for your cookie or sandwich or whatever.
