I've been looking at what's available online and I found several jobs that could be a perfect fit for me. They are not in my city but I could actually do them since they are fully remote positions. I'm just really hesitant about going for remote jobs right now out of fear they might turn into not so remote jobs once the pandemic subsides. I know it says it will stay the way it is, but how can I know that for certain? Would any of you risk taking a remote job right now?

Nobody here can realistically answer this question - too many unknowns/variables. Who are we to predict the future, and measure your level of risk acceptance? We don't even know what geography/market.
Covid numbers are skyrocketing so remote work is here to stay.
If remote work scares you then go work at Walmart instead.
Research the company employees on LinkedIn to check how many are truly remote.
There will be enough companies looking to keep as many folks remote as possible, to lower their real estate footprint. I'm not worried in the least. I discard all "Remote til Covid over" job alerts. 100% remote is the goal for me. If you're worried about it, seek out those in your commute target range, just in case.
