I'm leaving the MOMENT i check my fidelity 401k and see "vested amount" equal to the contribution amount. Will it be vested on that exact day of 3 years within the company? Or will it take like 1-2 business days to process?

It depends on your job title. Usually manager vest faster - year and a half. Others start vesting in 2 and a half years.
