Values matter! Except when it comes to admitting that MSG by any other name is still glutamate. Hydrolyzed vegetable protein (HVP) is produced by boiling foods such as soy, corn, or wheat in hydrochloric acid and then neutralizing the solution with sodium hydroxide. The acid breaks down the protein in vegetables into their component amino acids. Then pour it in the vat, fry it up real good and slap a "healthy" label on it. Wooo hooo! Don't forget to charge 3x as much.
