What's going on with this meeting at South...I'm just trying to figure out if I need to pack my crap or not.

Just pack up and leave. Don't wait or else all of the jobs will be taken once the company collapse. It will not look good to have your job experience be associated with EDMC on your resume when it hits the news.
Pack and be ready. Keep anything you want on your person. It sounds like they pack up your desk for you and that doesn't guarantee what you keep.
