I was laid off at the first of the month and Weatherford agreed to continue paying the premium on the insurance for my family as part of my severance. Tried to use it today and the insurance company said our policy has been cancelled.

They did the same to me. That’s a violation of their contract agreement under severance. They also screwed up my taxes so be on the lookout if you don’t live in TX.
They contract to a third party on this, P&A something. They are slow to get it started.
If you were let go at the start of the month your benefits should have been good to the end with any additional they gave you starting after that.
Agree, email and call HR to get them pressing on this. It happened to me and with pressure they got it started in about an hour after I talked to HR and advised I had an apt pending the next day and had to have it.
Worst case is if it was in your separation package you can pay and file claim.
Overall I agree that they work this very poorly- kind of par for everything there.
Use e-mail so you have a record of correspondence. They messed up on some of my final stuff as well. I worked for them long enough to realize it is more likely just incompetence than intentional. Good luck and hope you find suitable or better employment.
