Given the circumstances of consolidations taking place in the VLSI field, I have also learned and acquired skills as a data engineer. I always wanted to join Intel and have recently received an offer as a SOC validation eng. Also, I have heard that Intel provides opportunity to switch to different groups internally if interested. So, is there such a possibility of trying different roles?

Nope. Find a data engineer position somewhere else if that's what you really want to be. Don't trust intel managers or HR, they will promise you milk and honey when they recruit you and then they will pretend like you are smoking weed when you later ask for what they promised.
Why ask this question? Of course, managers and recruiters will always respond saying there are many paths in your career for both individual contributors and management. Problem is that you'll start in this position and your mgmt will label you as "critical personnel" meaning stay put with no path. You will become demoralized while they move to some other mgmt position leaving only carnage in their wake.
