I pushed the button and I'll get 48 weeks. Do I understand correctly that I'll also have health insurance benefits for the entire 48 weeks? It'll be through COBRA but it will essentially be the similar to what we currently have?

Well that may be new info there OP. Verizon is paying cobra. Do you get cobra if you have a job that offers benefits?
This is OP... I've had a new gig lined up since early October. I'm trying to decide if I need to pay for benefits at the new place also. Thanks xof for confirming what I thought.

Yes, that is my understanding as well. The company will pick up the entire cost of cobra for the same amount of weeks that they’re paying you for. You can be on cobra for a total of 18 months, and that includes the period the company is paying for. So after the company is done paying, then you can keep paying the premiums on your own until the 18 months is up.
