Our night manager said if this new shift doesn’t work out we will go back to having our third shift back anyone else heard this?

Likely because this isn't the first time this has been tried. Night shift has been removed and then reinstated a few times in the history of the company. Basically it'll all come down to what the numbers say a year or 2 after the switch over.
That's because a lot of what they are doing now, they did in the past, and are doing it again but differently. But they're looking to reduce staffing so they probably won't change it back. Plus managers are usually pretty clueless.
Your manager is just wishful thinking. Probably trying to get people to not quit their job. He's not being truthful.
